Nel Schellekens is chefkok van de Gulle Waard in Winterswijk. In 2014 won ze de Prijs voor het Puurste Restaurant van Nederland en haalde ze de halve finales van het SBS6 tv-programma Menu van Oranje. Ze verkoopt haar producten onder het label GIESZ (Geduld Is Een Schone Zaak). Ren Zanderink is als bioloog en journalist verbonden aan talloze tijdschriften en magazines. Hij is beheerder van de groentekas van het Rijksmuseum. In 2014 was hij co-auteur van het kookboek Liever Lokaal, winnaar Gouden Kookboek 2015 en Meest Duurzame Kookboek 2015.Alexander van Berge is fotograaf, gespecialiseerd in culinaire, interieur-, reis- en campagnefotografie.

HOW TO USE

Serve alongside strong cheddar cheese, leg ham, butter and a stack of fresh sourdough bread for a ploughmans lunch.

Blend a teaspoon of the brine with dill and mayonnaise to make a delicious dressing for hot dogs and smoked meats.

Spread some hearty bread with Mustard (page 45), then pile it with roast beef, cheddar cheese and a sprinkling of your chopped pickles.

Add a shot of the brine to a strong Bloody Mary mix for extra tang.

Prepare your vegetables: Cut your vegetables into bite-sized pieces, or to fit the height of your jars;

if using heirloom carrots, trim them and cut the smaller ones in half lengthways, and any larger ones into quarters. (If you use purple carrots, note that the

colour will bleed into the brine and turn it pink!)

Prepare your jar: Wash your jar in very hot soapy water, then rinse well and air dry. There is no need to properly sterilise the jar, as these pickles will be kept in the fridge.

Heat the brine: Place the vinegar, water and salt in a small stainless steel saucepan and bring to the boil, then leave to cool slightly.

Pack the jar: Tightly pack the vegetables into the jar, along with the dill sprig and peppercorns, and the chilli and bay leaves, if using.

Pour in the brine: Now fill the jar with the brine, covering all the

vegetables, and leaving at least 1 cm ( inch) at the top of the jar. Using a chopstick, gently poke the vegetables to make sure there are no air pockets.

Tenderise meat with a mix of yoghurt, garlic, ginger, olive oil, cumin and lemon juice before barbecuing.

Make some creamy Labne (page 98). For a great sauce for lamb chops, mash with sharp

feta cheese, salt, lemon juice and fresh herbs.

Warm the milk: In a medium heavy-based saucepan or double boiler, very slowly and gently heat the milk to

82C (180F). It should not be boiling, but lightly foaming around the edges. Keep your milk at this temperature for

10 minutes, over very low heat. Watch it like a hawk and stir every now and then with a wooden spoon, so it

doesnt catch on the bottom of the pan.

Prepare your Esky: Pour the 500 ml (17 fl oz/2 cups) boiling water into an Esky or portable cooler. After 15 minutes, empty the water out and close the lid to retain the heat.

Mix the milk and starter culture: When the milk has cooled to 46C (115F), pour 125 ml (4 fl oz/ cup) into a small bowl, then mix in your tablespoon of yoghurt, making sure there are no lumps. Now stir this mixture back into the rest of the milk.

Fill your jars: Pour the mixture into your jars; wipe the rims clean using paper towel. Screw the lids on.

Tuck in: After 812 hours, the jars should be full of yoghurt; if you are lucky there will be a layer of cream on top. Transfer your yoghurt to the fridge and use within 1 week. You can use this yoghurt as your starter for your next batch, but it will only last for another three to five more batches. After this, start again with 1 tablespoon of store-bought yoghurt.

Leave to ferment: Place the jars in your

warmed Esky, close the lid and leave overnight.

Chutneys are a great project for beginners. You basically throw everything in the pot and it simmers away to create a luscious, thick, jammy sauce. Youll know when chutney is ready because it will be a lovely deep colour, and will part like the Red Sea when you pull a wooden spoon through it. If you taste it as soon as you make it and think it is a little too hot or too vinegary, be patient: the trick with chutney is to let it sit for at least a few weeks before you use it, so the flavours can mellow and get to know each other a little.

With the chutneys in this book, if any of the jars dont seal properly (see Jam 101, page 55), store the jar in the fridge and use within 1 month.

Je zou kunnen zeggen dat de beeldende kunst een stille kunstvorm is. De kus van Rodin maakt geen geluid, evenmin als De Nachtwacht van Rembrandt. Toch kun je in een handomdraai fantaseren over het zachtjes knisperen van kleding als je kijkt naar het beeldhouwwerk van Rodin, of naar het gemurmer van de leden van de compagnie van Banning Cocq.

Stilte maken het lijkt een contradictio in terminis. We maken een reuzesprong, misschien wel via Vermeer, en Malevitsj met zijn zwarte vierkant, naar Mark Rothko en Robert Ryman, die niet in zwart, of in plooien, of in monniken, maar in een kleur, de kleur wit, kern en wezen van stilte ontwaart. I want to raise the issue of silence. zei Ryman ooit, en ik denk dat hij met die uitspraak een ambitie en ideaal van wel meer kunstenaars formuleerde.

In dit liedje weet de ik- guur meer dan de meesten van ons. Wie durft in ernst te beweren hoe stilte er uit ziet? Een antwoord op die vraag herbergt altijd een metafoor of verwijzing.

Joost Zwagermans ode aan de stilte van de kunst

Dit boek is een unieke visuele ode aan Joost Zwagerman, en tevens een aanvulling op zijn oeuvre. Het is een catalogus van door hem geselecteerde kunstwerken. Het bevat de afbeeldingen van de werken waar Joost iets mee had en die hij koos voor wat zijn laatste tentoonstelling zou zijn. Een deel van deze keuze was ook opgenomen in zijn tentoonstelling Silence Out Loud in Museum Kranenburgh in Bergen. De teksten die Joost als inleiding, hoofdteksten en bijschriften bij de tentoonstelling maakte, vormen de basis van dit boek. De werken van circa 60 kunstenaars uit Nederland en Belgi, en een paar van zijn grote Amerikaanse helden, zijn daarnaast voorzien van Joosts commentaar en quotes uit zijn correspondentie met deze kunstenaars. Het boek bevat een voorwoord van dichter Pieter Boskma en teksten van Pieter Bijwaard en Harald Vlugt. Een aantal portretten van Joost van fotograaf Koos van Breukel zijn opgenomen als foto essay.

He takes photographs, makes paintings, videos and installations and has held major gallery exhibitions. Lady Gaga, global superstar and world-famous musician, launched an album titled ArtPop, featuring Jeff Koonss artwork, and staged an event tour called ArtRave. She sings, Pop culture was in art, now arts in pop culture, in me! In a world that distinguishes between high and pop culture, its about harnessing the art worlds cachet. Crossing over into the art world certainly has its perks. It offers a marketing tool par excellence, garnering headlines, provoking controversy and bamboozling people. Jay Zs performance went viral within minutes, as did actor Shia LaBoeufs decision to wear a paper bag on his head to movie premieres and to hold audiences during opening hours at Cohen Gallery in LA in another homage to Abramovi, where visitors could choose from an array of props to interact with him.

Unsurprisingly, these crossovers garner mixed reactions in the art world. While there is something to be said for breaking down the distinctions between art forms, removing hierarchies of creativity and wearing down arts elitism, each industry operates according to different rules of taste and measures of quality. And in art, the Midas touch of a global superstar might simply not work. Indeed, art world legend has it that when Lady Gaga turned to her friend Klaus Biesenbach, the director of MoMA PS1 in New York, and asked Is this art, what Im doing?, his answer was No.

Zeventig worden voelde voor mij net zo als zestig worden. Leeftijd zegt me niet zo veel. Leeftijden zijn bij mij altijd gekoppeld aan gebeurtenissen, niet zozeer aan gevoel. Ik voel me vaak nog een kind. Ik heb ook nooit last gehad van de klassieke midlifecrisis. Mijn hele leven is een midlifecrisis! Ouder worden zie ik als een zachte vorm van vervellen. De beschermlaag van oude gewoontes en ballast verdwijnen langzaam maar gestaag: je gaat dingen scherper zien. Ik begrijp ook meer van mezelf. Althans dat denk ik. - P E TER FAB ER

Ik ben geen mens van leeftijden. Nooit geweest. Toen ik 70 werd, dacht ik: leuk, mijlpaal, maar verder niets bijzonders. Ik voel me nog altijd een jonge meid. In alles. Fysiek merk je soms wel dat je wat ouder wordt. Sneller moe. Maar dat weerhoudt me niet om dingen te blijven ondernemen. Ik ben altijd bezig. Altijd op zoek naar nieuwe uitdagingen. De grootste verandering tussen mn 60ste en 70ste is dat je je bewuster bent van hetgeen er om je heen gebeurt. Dat maakt het leven wel een stuk rijker. Vroeger draaide alles om mijn gevoelens, angsten en onzekerheden. Ik deed er ook alles voor om in de schijnwerpers te staan en wilde de buitenwereld laten weten waar ik mee bezig ben.
