DIXON – It sounds like a joke aching for a punchline: Why did the boatload of chickens cross the hallway?

Tuesday afternoon, the voyage was made so that a crew of sixth-graders at St. Mary Catholic School in Dixon could show off the emblem of their gracious-ness and effort.

No joke, the school raised $2,668 this Lenten season for Rockford-based Hope for Haitians. Principal Jean Spohn said every dime raised goes to recovery efforts in Haiti that contin-ue in the wake of the Janu-ary 2010 7.0-magnitude earthquake.

St. Mary Catholic School in Sterling took part, too; its final tally will be made after Easter break.

In Kathy Shirley’s class-room Tuesday, there was no mistaking the Captain. Spohn sported a captain’s hat that Shirley’s husband, Glenn, recently ordered off Amazon.com.

Holding the vessel and directing her fellow swash-bucklers was Cecilia Sagel, the 11-year-old taskmaster who took charge as soon as a bare-bones plan for a boat was in place.

“Let’s get the tall ones in the back and the short ones

in the front,” Cecilia said from front and center of the deck. “Please be careful of the chickens. Don’t knock them over.”

If she sounds bossy, it’s because she’s relished the chance to be … well … bossy.

Winner finds a heart of gold in VFW fundraiser

DIXON –The queen of hearts has finally come out of hiding.

After 44 weeks, or 308 days, the queen showed her face for Rock Falls resident Noel Reed Jr., who has won a sizable chunk of the $301,510 jackpot.

He will receive 70 percent, which totals $211,057 before taxes.

In the Dixon VFW’s packed banquet hall Thursday, Reed’s orange ticket with the number 8 scrawled on it was drawn, picking the card that revealed the long-sought-after queen of hearts.

The queen was one of 10 cards left on the board. If another card had been chosen, the jackpot would have c l imbed to near ly $390,000.

After a collective groan from the crowd, VFW board member Mike Kuba called Reed, who was not in attendance for the drawing.

“I got his voicemail,” Kuba told the audience as they quietly waited to hear the winner’s response to the news.

Reed could not be reached for comment Thursday night, but VFW quartermaster Tom Bushman said he spoke with him, and he said “That just made my life” after realizing he won a 6-figure payout.

“I’m glad the money went to someone local and someone who deserves it,” Kuba said.

Though many ticket holders were disap-pointed the game came to an end, VFW offi-cials will finally have a short breather from 7-day work weeks – at least until the next game

starts.“Everybody was getting

worn out, and we needed a break,” Bushman said. “I wanted the game to go a couple more weeks” But Bushman isn’t disap-pointed. As the jackpot grew, he was just hoping it would hit $100,000.

Repairs, charityThe VFW will keep

15 percent of the jackpot, totaling about $45,226, which will go toward building maintenance and repairs to the facil-ity.

V F W C o m m a n d e r Chuck Langele said the sum won’t cover every-thing, but it’ll make a good start.

“This game is the great-est thing in the world,” he said. “Every VFW should start one of these.”

The remaining 15 per-cent will be split among two national and eight local charities: Dixon Food Bank, Vietnow, Buddy Bags, the Lee County Historical Soci-ety, Pegasus Special Rid-ers, Habitat for Humani-ty, PADS Homeless Shel-ter, the Leydig Center, the Semper Fi fund and the American fund.

Split evenly, each orga-nization will receive about $4,500.

Next gameThose looking to try

their luck in another hunt for the queen of hearts won’t have to wait long.

Tickets for the second game will be on sale start-ing Thursday at the VFW, 1560 Franklin Grove Road. The first draw-ing will take place at 7:30 p.m. on April 7. The VFW open at 2 p.m. Monday through Friday and 11 a.m. on weekends.

The game will begin

with a jackpot of $88,135, the amount raised since last week.

“That’s a lot of money right there to start our next venture with,” Langele said.

Organizers plan to revise the rules of the game, which will be posted next week on the VFW’s Facebook page at facebook.com/DixonVf-wPost540.

There’s no fishing at the park until opening day on April 2, when fishers can get up at the crack of dawn and head on down to the fishin’ hole at 5 a.m. Once fishing opens at the park, there will be a catch limit of five fish per day.

Holiday meals are an excuse to trot out all the famil-

iar, incredible foods we grew up with and abso-lutely adore, perhaps even more than the fam-ily members who gather around the dinner table.

At Easter, that often means honey-glazed ham (with lamb a close second), creamy au gra-tin potatoes, ricotta pies and eggy sweet breads so rich in tradition. Also, there are the egg dishes, including hard-cooked ones, tinted with all the hues of the rainbow inside coffee cups filled with a stinky mix of water, vinegar and Paas Easter egg dye tablets.

An ancient symbol of new life, colored eggs have been the stuff of Easter baskets and mad-dash egg hunts since the early 19th century, thanks to the Pennsylva-nia Dutch, who brought their tradition of the Oschter Haws, or Easter Hare, with them when they settled in the com-monwealth.

Along with the eggs every year, comes the question: What do you do with all the leftover eggs on Easter Monday? One can only eat so many egg salad sandwiches, after all.

For many, the answer is to slice the orbs in half, mash the yolk, mix it with mayonnaise and/or mustard, spoon the mix-ture back into the empty egg white shells and then dust the top with paprika for some deviled eggs.

Also sometimes called salad eggs or stuffed eggs, this cocktail party and

picnic classic has a long and tasty history. While the first known reference to deviled eggs appeared in print in Great Britain in 1786 – the word “dev-iled” refers to making a dish dark or richly spiced – culinary historians believe the dish’s roots can be traced all the way back to Roman times. Then, eggs were boiled and seasoned with spicy sauces or vinegar.

Stuffed eggs similar to what we eat today appeared in Andalusia (now Spain) in the 13th century, and across Europe by the 15th cen-tury. Introduced in the U.S. in the 1800s, the fin-ger food became a picnic, party and Easter dinner staple sometime after World War II.

Made with just three or four ingredients, classic deviled eggs might be one of the easiest reci-pes. But you can be so much more adventurous with the fillings, if you care to step out of the box.

The unusual twists will make that surplus of hard-cooked eggs seem downright egg-cellant.

Deviled Eggs with Parsley, Green

Onions and Jala-peno

Makes: 2412 hard-cooked eggs3⁄4 cup mayonnaise2 teaspoons stone-

ground or Dijon mustard2 tablespoons minced

fresh parsley, plus extra sprigs for garnish

2 tablespoons minced green onions

1 small jalapeno, minced

1 teaspoon chopped

fresh cilantroPinch of cayenne pepper! teaspoon saltPepper to taste" to 1 teaspoon paprika,

or to tasteSlice each egg in half

lengthwise. Scrape out yolks and place in bowl. Add mayonnaise, mustard and blend together with a fork. Add the rest of the ingredients, except the paprika, and use a fork to blend until the mixture gets creamy. Spoon mix-ture into each egg half. Sprinkle with paprika and garnish with a sprig of parsley.

12 hard-cooked eggs, peeled and halved

1/2 cup cream cheese1/4 cup mayonnaise1 teaspoon Dijon mus-

Salt and pepper, to tasteHandful bagel chips, bro-

ken into small piecesMix together cream

cheese, mayonnaise, mus-tard and scallions. Stir in salmon. Season with salt and pepper. Spoon into the egg whites; top with broken bagel chips and more smoked salmon.

lengthwise. Remove yolks and place in a medium bowl. Add mayonnaise and pesto to the yolks and mash with a potato masher. Add shallots, olives, parsley, capers and chopped shrimp. Stir to combine. Season with sea salt and black pepper.

Drop teaspoonfuls of the egg yolk mixture into the egg halves, then top with small shrimp. Drizzle with extra-virgin olive oil

and sprinkle with paprika. Refrigerate until it’s time to serve.

Roasted Pepper-Thai Chili Deviled

EggsServes: 168 large hard-cooked

eggs1/3 cup mayonnaise1 tablespoon Dijon mus-

tard1 teaspoon white-wine

vinegar1/4 cup diced roasted

peppers1/4 to 1/2 teaspoon

minced red Thai chiliCoarse salt, to tasteThinly sliced chilies, for

garnishPeel and halve eggs

lengthwise; remove yolks and transfer to a bowl. Mash with a fork; mix in mayonnaise, mustard and vinegar. Press through a sieve to make smooth. Pulse yolk mixture with roasted peppers, Thai chili and salt in a food proces-sor.

Using a pastry bag fitted with desired tip (I used a plastic baggie), pipe yolk mixture into whites. Gar-nish with thinly sliced chil-ies. Serve immediately, or

Do you go with a hot start, or a cold start? Fresh eggs or ones that have been sitting in the fridge for days?

That’s the quandary when it comes to hard-boiling eggs for your Easter celebration.

Some cooks, like Kenji Lopez Alt, managing culi-nary director of the website Serious Eats and author of “The Food Lab: Better Home Cooking Through Science,” swear by the method I grew up with – carefully dropping eggs into water that’s already boiling. Others, including the America Egg Board (incredibleegg.org), say you should bring the eggs slowly to the boil in a pot of cold water.

It’s enough to scramble a cook’s brain.

For this story, we’re going to go with the easier version – a cold start. Here’s how:

• Place your eggs in a large pot and cover with cold water by 1 inch. Bring to a rolling boil over medium-high heat.

• Allow eggs to boil for 30 seconds, then cover with a tight lid, remove

from the heat and set aside for 12 minutes.

• Drain eggs in colander, then chill completely, either in an ice bath (for at least 15 minutes), under cold running water or in the refrigerator over night. The cooler the egg is, the firmer and tighter its structure will be and the easier it will be to peel the shell away from the cooked white.

• Gently crack the eggs all over their surface, start-ing at the fat end and gently rotating and tapping all around until the egg is covered with cracks. Roll egg under the palm of you hand.

• Start peeling from the large end. If you like, you can peel eggs under cool, running water.

• To make deviled eggs, slice the eggs in half length-wise. Scoop the yolks into a bowl and prepare filling. Fill empty egg-white halves with the yolk mixture using a spoon, piping bag or a resealable plastic bag with a corner snipped.

• Hard-boiled eggs keep, chilled, 5 days.
