Car? You know, the cheeky mustang that helped bring Mumford & Sons to Dixon? Yeah, I figured you’d remember that little beater. After the trip it’s about to undergo, you’ll remember Patrick Taylor – but that’s not why he’s doing it in the least.

Taylor, a 2011 gradu-ate of Dixon High School who will graduate from University of Illinois in Champaign-Urbana in May, will hit the road May 19. He’ll pick up two of his fellow resident assistants in Chicago, and they’ll drive to each and every one of the 48 contiguous United States to educate the masses on something very personal

to them, something that’s affected their lives pro-foundly: mental illness.

I spent about an hour with Taylor in July 2014 – he even gave me a ride – but he didn’t mention his attempted suicide during high school. Of course he didn’t. He was a soccer player, a skater, a biker, a smart, sociable, active individual. What could have been wrong?

During his senior year, he quit soccer. Motiva-tion disappeared.

“People tend to stay quiet when faced with a discourse on mental illness,” Taylor wrote in a news release for the Mental Illness Awareness Tour. “Help us break this silence.”

The story goes that John Mon-tagu was such an

inveterate gambler that he did not want to leave the gaming tables even to eat. So he called for meat to be brought to him between two slices of bread; that way, he could eat at the table and keep his fingers clean, thus saving the cards.

Montagu was more than just a dedicated gambler. He was also the Fourth Earl of Sandwich. Two hundred and fifty years later, we still gobble up the gustatory creation that he created and that bears his name.

Where would we be without the sandwich? How would culture be different? If nothing else, McDonald’s would never have been so popular just selling ground meat pat-ties on a plate. And we would never have known the extraordinary sensa-tion of eating peanut butter and jelly on bread, quite possibly the closest mankind has ever come to achieving perfection.

To celebrate the great gift that Montagu gave us, I decided to try new varia-tions on classic sand-wiches.

Instead of a hot open-faced roast beef sandwich, I gave mine a French flair and made it easy to cook, too. I gussied up a traditional grilled cheese sandwich. I took the con-cepts of shrimp salad and shrimp cocktail and com-bined them. And instead of a BLT, I made an LGBT.

That is to say a lettuce, guacamole, bacon and tomato sandwich – it’s just a BLT with guacamo-le and a trendy name.

What difference could a little guacamole make? Quite a lot, actually. It entirely changes the sandwich’s complex-ion, providing a cool-

ing counterpoint to the bacon’s smoky salt.

The guacamole also adds more of the creaminess that is typically provided by mayonnaise, only it brings with it that wonder-fully rich taste of avocados, the faint bite of red onions and just a hint of garlic.

It’s that garlic that is the secret to my guacamole, by the way. Usually when you use raw garlic, no matter how finely you mince it you still run the risk of swallowing an overpowering mouthful of garlic. But I was at a great Mexican restaurant in New York many years ago that eliminated that problem by putting garlic powder in their guaca-mole. I’ve been using garlic powder ever since.

For my next dish, I began with an American classic and then took a detour to France. I’m calling it a Hot Roast Boeuf Sandwich.

At heart, it is still a hot, open-faced roast beef sandwich, a dish served at one time in every diner in America. The difference is in the cooking of the beef.

Inspired by boeuf bour-guignon, I simmered the meat in red wine, which I mixed with Dijon mus-tard (after all, Dijon is in the dish’s native region of Burgundy). I added a bit of celery, somewhat more carrots for a touch of sweetness, and quite a lot of onions because I wanted it to be a beef and onion sandwich.

The result is a familiar meal with a deliciously unexpected taste.

Devising the grilled cheese recipe was easy. Cheddar cheese goes par-ticularly well with apples. Both apples and cheddar cheese go well with wal-nuts. I put it all together with bread, smeared on a little more Dijon mustard, which is also a good foil for the apples and cheese, and grilled it in a pan.

It’s definitely a winner. I don’t see a reason to make an ordinary, boring grilled cheese sandwich ever again.

Finally, I made my ver-sion of a shrimp salad sandwich. I chopped up cooked shrimp and stirred in a little mayon-naise (I don’t like too much in my shrimp or chicken salads). Then I made a batch of my own cocktail sauce – you could use a commercially available cocktail sauce if you want, but home-made is better – and stirred in just enough to flavor the mayo.

The sandwich was intriguing and irresist-ible. The cocktail sauce gives it more bite than ordinary shrimp salad, and also more flavor.

I am certain that John Montagu, the 4th Earl of Sandwich, would approve.

LGBTYield: 2 servings4 slices bacon1 ripe avocado1 tablespoon red onion,

chopped2 tablespoons diced

tomatoesPinch garlic powder1 wedge lime2 tablespoons mayon-

naise, optional4 pieces bread, toasted2 pieces lettuce4 thin slices of tomato1. Cook bacon until

crispy. Drain on paper towels and set aside.

2. Peel and seed avoca-do. Mash in a small bowl until as smooth or chunky as you want. Stir in onion, tomatoes, garlic powder and lime juice, and season to taste with salt and pep-per; add more garlic pow-der if desired.

3. Spread mayonnaise on toast. Layer with let-tuce, tomatoes, guacamo-le and bacon, and top with other slice of toast.

Per serving (with may-onnaise): 458 calories;

33 g fat; 6 g saturated fat; 16 mg cholesterol; 11 g protein; 35 g carbohydrate; 5 g sugar; 8 g fiber; 549 mg sodium; 47 mg calcium.

Hot Roast Boeuf Sandwich

Yield: 6 servings3 pounds boneless

chuck roastSalt and pepper1 cup dry red wine1! tablespoons Dijon

mustard, divided1 clove1 rib celery, cut into

2-inch pieces2 medium carrots,

peeled and cut into 2-inch pieces

1 medium onion, sliced thin

4 ounces mushrooms, halved or quartered

2 tablespoons mayon-naise

1 tablespoon prepared horseradish

6 slices toasted bread1. Generously season the

meat with salt and pepper.2. Combine the wine

with ! tablespoon (1! teaspoons) of the Dijon mustard and pour into a large slow cooker. Add the meat, clove, celery, carrots, onions and mush-rooms and cook on low power until tender, about 8 hours.

3. While the meat cooks, mix together the mayon-naise, horseradish and remaining 1 tablespoon Dijon mustard.

4. When the meat is done, discard the carrots, celery and clove, if you can find it. Remove any vis-ible fat and slice the meat against the grain. Spread the horseradish-mustard sauce on the toast and portion out the meat, onions and mushrooms; these are open-faced sandwiches, so there is no top slice of toast. Pour some of the jus over each sandwich and serve.

Grilled Cheese with Apple and

WalnutsYield: 1 serving2 slices bread2 teaspoons Dijon mus-

tard1 ounce cheddar cheese,

sliced or shredded1/2 small apple, sliced1 1/2 tablespoons

chopped walnuts1 tablespoon butter1. Spread the mustard

on both slices of bread. Add cheese, apple and walnuts to one, and top with the other slice of bread.

2. Melt butter in a small skillet over medium heat. Cook the sandwich, turn-ing once, until both sides are golden brown and the cheese has melted.

Per serving: 470 calories; 31 g fat; 13 g saturated fat; 58 mg cholesterol; 13 g protein; 40 g carbo-hydrate; 12 g sugar; 3 g fiber; 688 mg sodium; 261 mg calcium.

Shrimp Cocktail Salad Sandwich

Yield: 3 servings1/2 pound cooked

shrimp, chopped1/4 cup plus 1 table-

spoon mayonnaise2 tablespoons chopped

celery1 tablespoon chopped

red onion2 1/2 tablespoons cock-

tail sauce, see note6 slices white breadNote: You can use com-

mercial cocktail sauce, but it will taste better if you make your own by mixing 1 tablespoon ketchup, 1 tablespoon chili sauce, 1/2 teaspoon prepared horseradish, 1/4 teaspoon Worcestershire sauce and 1/4 teaspoon lemon juice.

1. In a medium bowl, stir together shrimp, celery and red onion. In a small bowl, mix together mayon-naise and cocktail sauce, and mix this with the shrimp.

2. Use this mixture to make sandwiches, add-ing lettuce and tomato if desired.

STERLING – What if you could rewrite history – more specifically, the Civil War? Going further, what if you could turn it into a comic book, an alternate-universe news-paper, a movie script, or a gaming app? If you’re an eighth-grader, how would that sound?

Two Challand Mid-dle School teachers are learning that sounds pretty doggone good.

Social studies teacher Adam Gee and science teacher Megan Davis have joined forces for five periods a day. There’s an open lane between their classrooms, situated right around the corner from each other, so students can freely ask questions about either subject, as they bring home one of four project options.

They could write a hypo-thetical script for “Back to the Future 4,” in which they’d send Marty McFly and Doc Brown back to the mid-1800s. Carter Lehman, 13, latched onto that idea, and has just about finished his script. Once he puts some finish-ing touches on it, he’ll cre-ate a snapshot of what he did and what he learned.

He’s a fan of the movie trilogy, and he leaked a cliffhanger of a spoiler.

“One of them might not make it,” Carter said.

Areyana Stark and Chloe Gladhill, both 13, are examining the ripple effect of real-life char-acters’ fates. Areyana is developing an online class, and Chloe is creat-ing a newspaper, both of which will tell the story of the war – if the South had won.

“We’d learn about the Civil War differently,” Chloe said. “We’d have a different point of view.”

“Obviously, slavery is a big part of it – that’s what they were fighting over,” Areyana said.

Other students took the popular gaming app Clash of Clans and adapted it to the Civil War. They didn’t actually redesign the app – it’s a quarterly project, not a yearlong one – but showed how aspects of the game would change if rifles replaced arrows, and the war played out on American soil, rather than fictitious kingdoms.

Trevor Vos and Adan Ramirez, both 13, and 14-year-old Brandon Ducoing are getting close to a finished product. Bet-ter yet, they’re remem-

bering what they’ve researched.

“It’s a lot better than just going into a textbook and trying to remember stuff,” Brandon said. “I don’t remember stuff like that. This is fun, and you look forward to it every day.”

Jada Rhodes, 14, knew a lot about Harriet Tub-man before she chose the option of turning a histor-ical figure into a superhe-ro, then creating a comic book. Not a comic super-fan, per se, she’s learned how much work goes into creating one. She’s using the app Book Creator, while Sam Smith, 14, is finishing an old-school, colored pencil-and-paper comic. She’s a huge fan of Marvel comics, and is having a blast giving Con-federate spy Belle Boyd the power of invisibility.

“This is lots of fun,” Smith said. “I just love it. I think this will help me understand more about the Civil War. I never even knew there were spies during that time.”

Four weeks of research-ing five events Tubman was involved in, and in which her invisibil-ity, super-hearing, -speed, and -strength could alter history, left Jada with a greater appreciation – and

a sense of empowerment.“Any teacher can sit

up there and talk about the Civil War, but learn-ing about it for yourself, and directing your own learning, makes it more fun and interesting,” Jada said. “You learn about what you want to learn about – not just what the teacher decides to learn about that day,”

Gee doesn’t take offense – not in the least. He’s pleased, really, with the outcome of the first social studies-science cross-cur-ricular project.

“They’re hands-on, it’s all tied to standards, but it’s not me saying they need to learn this,” he said. “It gives them the opportunity to explore their interests within top-ics, rather than listening to me drone on and on all day, and then they don’t remember anything.”

Davis said most students flocked to the “Back to the Future” and Clash of Clans options, and that the hardest option was the alternate-ending-of-the-war project.

“It was the trickiest one to get science into it,” Davis said. “I had them focus on weapons and how different weapons would react with New-

ton’s laws. Only a select few kids picked that option, but the ones who did seem to be making the connection just fine.”

Following the restructur-ing of state learning stan-dards, bringing them into line with Common Core standards, math-science cross-curriculum projects became no-brainers.

What Challand is doing makes equal sense, once

you see it in action.“It sort of breaks down

the barriers between the subjects,” Gee said.

“At first, it was kind of nerve-racking, because it was breaking past what’s normal,” Davis said. “But once we saw how kids were reacting once the barrier was broken down, and they saw two subjects at once, it became inter-changeable.”

tial roadblock on a trail system in Sterling has been removed after a local pastor worked out a deal with the

park district. Abiding Word Church

Pastor Scott Porter refused to sign an ease-ment agreement with the city, but he has agreed to finalize the pact with the Sterling Park District.

The park district needs the easement before it can get work started on its trails project, which is fund-ed by grants from the federal Safe Routes to School program.

W h e n P o r t e r addressed the Ster-ling City Council on Monday, he said the agreement had been changed since he last

saw it, jeopardizing future plans the church has for putting in an entrance/exit point on Lynn Boulevard.

But city officials said the easement isn’t necessarily tied to the church’s debt with the city. “You can give the park district the ease-ment, and the debt swap can be a separate issue,” Mayor Skip Lee said Monday, referring to the deal the city and the church reached that would have the city cede about 5 acres to the city in lieu of $53,740 the church owed the city for participation in a stormwater retention basin project planned in the area.

Porter spoke with park district officials Tuesday morning, and paperwork is being drawn up for an ease-ment between the church and park dis-trict. Porter said the church is all about kids and has always sup-ported the path.

“When we bought the land in 2001, the initial church plans had the path on them,” Porter said. “This is a great addition to the city, and it will bring people to the property.”

Porter said the church

access issue has noth-ing to do with the park district, so he didn’t want to hold up the trail project.

“We swapped land several years ago with the city, and we were supposed to have space for a 30-foot-entrance, but we’ll get that worked out with the city,” Porter said.

Park District Director Larry Schuldt said new documents are being drawn up because the legal descriptions must be changed.

The new documents must be approved by the park board and the council. That should happen March 21, when both bodies next meet.

That means the trail work planned for this year will be backed up a couple of months because the park dis-trict will miss getting on the Illinois Depart-ment of Transporta-tion’s April bidding list.

“We’re going to miss that one, but we will get on the June list, so it might not be

done until October or November,” Schuldt said.

The thinking behind the earlier schedule, however, has changed, so the park district is fine with a later start.

“We were originally going all the way to Franklin School this year, so we wanted to be finished before school started, but now we’re stopping at Thomas Park,” Schuldt said.

The park district had planned to build the part of the trail from Franklin School to Sixth Avenue this year,

and complete the por-tion from Lynn Boule-vard to Challand Mid-dle School next year. Because of changes in the scope of the grant, and project inflation, the work from Franklin School to Sixth Avenue will now be done in two phases.

Without the ease-ment, the park dis-trict could have still done the project, but it would have been forced to alter the route and reapply for the grants.

Finding a path to compromiseWhat’s next

The Sterling Park District Board of Com-missioners next meets at 6:30 p.m. March 21 at the Duis Recreation Center, 211 E. St. Mary’s Road.

The Sterling City Council next meets at 6:30 p.m. March 21 at City Hall, 212 Third Ave., on the first floor in the Council Chambers.
