Who is “Scolari Engineering / Texpak Inc”?

Key Advantages to Customers

Green Coffee

When bags are unloaded, the operator informs the system of which type of coffee is being unloaded by entering the code and destination using the electronic panel located in this area. The bags are then cut (manually or automatically) to start the emptying procedure. The system protects against different products being loaded into the same silos, unless specific instructions for this are given. The green coffee unloading system has been functioning at many of our customers’ plants for over 25 years. Scolari Engineering has learned a great deal about how to reduce errors made by the operator and is capable of managing batches and their traceability.

Batching

After being cleaned and selected according to size and density, the coffee is weighed (net weight) and sent to the designated green coffee silo.

Subsequently, the operator chooses the product to be treated from a blends (or qualities) menu

pre-programmed into the computer. This pre-programming is very simple, easy to modify, and can be learned in few hours. After selecting the blends, the operator enters a few variables, such as the amount of roasted coffee to be produced, the roaster to use, the sequence and the destination of the batch. When the batch reaches the roaster, the appropriate roasting curve is set automatically by the product or blend code.

Roasters

The roasting systems installed in our customers’ plants are totally computerized and are the end result of more than 25 years of experience. Many years of field use have helped us to solve problems that crop up on the less frequent basis, but still contribute greatly to efficient operation, such as sudden breaks in the roasting phase or temporary power cuts in parts of the roasting cycle.

Over the years our control program has allowed for more and more accurate roasting. We even compensate for changes in barometric pressure at the stack!

Roasted Coffee

Once the roasted coffee has been sent to the allocated silo, a roasted batching program takes over; this is very similar to the green coffee batching menu. From the roasting menu, a schedule can be obtained to make blends by using the computer to introduce the correct percentages of each roasted product into the special blender. Unlike green coffee, roasted beans are extremely fragile and when allocated to “whole bean” use, are conveyed by pneumatic pulse conveyors with electronic speed control. The blender is designed to handle the roasted beans with care, as are our roasted bean silos. Alternatively, if the blender is not required it can be excluded and the computer sends the

product to the next phase, whether this is grinding or packing.

Ground Coffee

Another section of the system monitors ground coffee degassing times and establishes the destinations of ground coffee. This is another area in which experience has taught us a great deal about the numerous mistakes that can be made by operators, and time has given us the opportunity to “program out” many potential errors. Our tracking and control system for ground coffee allowing us to make more efficient use of silos with optimum sizes of 1 or 2 tons. The conveyor for ground coffee combined with our sealed degassing system utilizing inert gas requires almost no maintenance and has high resistance against declassification and density change. For systems with longer routes, a vacuum conveyor is used.

One grinding mill can fill up to 12 silos. Totally computerized grinding regulation for each blend chosen. The machine is easy to use, requires almost no maintenance, and the granulometric spectrum can be set to the customer’s requirements to preserve all the fragrance of the coffee.

Leveraging core engineering and manufacturing capabilities, PLITEK designed and manufactured a revolutionary new valve featuring a thinner structure with enhanced flexibility with an integrated filter, which significantly improved the opening and closing consistency on contoured surfaces and packages requiring rapid degassing. Filtered valves also prevent coffee grounds from entering the package and interfering with valve functionality. Additionally, one-way degassing filtered valves prevent bricking at higher altitudes.

Another example of PLITEK’s innovation is the PV-51- mini valve for fractional packaging. With industry trends increasingly moving towards use of fractional packaging, PLITEK recognized the need for offering reliable one-way degassing valve that will be cost effective. The PV-51 effectively vents internal gas build-up, while sealing-out environmental oxygen, moisture, and contaminants. Fresh coffee is essential for roasters, which is what a customer looks for in quality coffee. In order to provide the freshest coffee possible and preserve the quality of their coffee, coffee roasters should pack and seal their coffee immediately after roasting in a package that has a one-way degassing valve.

As freshly roasted coffee cools, it releases carbon dioxide gas. The degassing process can last up to a week depending on the roast and other factors. Without the proper mechanism in place to release the carbon dioxide, degassing coffee inside of a sealed package will cause the package to swell and potentially burst. Freshly roasted coffee can be bulk degassed; however, the problem with this approach, in addition to tying up inventory, is that environmental oxygen and airborne contaminants cause the coffee to rapidly lose its freshness.

The solution of using one-way degassing valves that are placed on the coffee packaging is a necessity. The purpose of one-way degassing valves is to allow carbon dioxide gas from freshly roasted coffee to escape from the packaging while keeping environmental oxygen and contaminants from coming in.

The direct benefit to coffee roasters is providing the ability to package freshly roasted coffee immediately without having to degas which increases their throughput. It also, gives the ability to preserve the quality of their roast.

Torie & Howard was launched in 2012 by color consultant, Torie Burke and interior designer, Howard Slatkin, with their

Who is Pod Pack?

Founded in 1996, Pod Pack has primarily focused on copacking espresso pods, hotel in-room pods, and OCS pods. The company

is unique in that it has chosen not to promote its own brands, but instead focus 100 percent of its efforts on copacking for others. All of the operations of the company are located in Baton Rouge, LA, with an administrative and sales office in New Jersey. Who is “international Coffee Consulting”?

I nternational Coffee Consulting is a resource for the coffee industry to implement, enhance and embrace quality improvements. Starting

at the tree and ending with the consumer, ICC demonstrates how improving quality will improve profits.

ICC was founded when Rocky Rhodes sold his roasting company of 13 years and started teaching Q-Grader Certification classes. These classes exposed him to areas of the industry with which he had little familiarity. Now with a new breadth of knowledge, ICC offers services to farmers and baristas alike.

Clients began to call requesting unique and specialized knowledge to solve business issues. Perhaps one of the more unique cases had to do with a high-end hot cup manufacturer. They had a desire to reach the wholesale roaster and sell the cups to, and through, them. ICC took a list of nearly 1000 roasters across the US and segmented them into several different categories. Within the categories were breakdown by customer make-up and were put in a grid to identify highest value prospects. By using this grid and the segmented and ‘cleaned’ list of roasters they were able to save thousands of dollars in lost sales time. It also increased sales for this company in this segment very quickly.

So we got swamped in a good way and brought on another coffee guy. Jeremy Raths, owner of The Roastery is also a Q instructor. Roasting since 1979; ancient and has been around round the corner. Raths can help lots of folks all along the coffee chain, from growers through roasters to coffee service. He got started at a regional roaster managing seven million pounds and has been shrinking since. He now roasts on a tiny little six-pounder. Oh how the mighty have fallen.

Adding echinacea with goldenseal to vitamin C became the base for Immune Support. Thus, David and Ellie devised a supplement-boost product line of their own. The goal was that each boost should include multiple ingredients, be taste-free, easy to use, and of uniform scoop size. The name for each boost would have to be descriptive of what benefit the boost provided. They came up

Who is “Service Ideas, Inc.”?

In 1946, Art Murray had a vision to improve the service in his own Murray’s Restaurant of Minneapolis and to share those ideas with fellow

operators. His ideas, innovation, and successes are the foundation of Service Ideas.

Many of Art’s early innovations continue to be used to this day, such as our Thermo-Plate™ Sizzle Platters and Thermo-Serv® Carafes. Designed in 1956, our Thermo-Serv® carafe revolutionized coffee service by offering a carafe with insulation to keep the beverages hot for up to three hours.

The innovative ideas of Art Murray continued with his son, Patrick Murray, who took over the reigns of Service Ideas in the 1970’s. In 1987, the New Generation® carafe was designed. As a result Service Ideas became the first manufacturer in the United States to produce a push button lid, making the product safer for customers and wait staff alike. Their flagship product, the Juwel, is one of the most easily recognizable and stylish carafes in their arsenal. Alfi®’s main driving force has always been in their exceptional quality. Five layers of insulation in their glass vacuum carafes provide the best heat retention on the market. Alfi®
